Indian Kitchen

I have traveled to few countries as part of my job and I noticed that kitchen in every country is different. The ingredients, the utensils, the process of cooking, even the set-up of the kitchen - everything changes with culture. That forced me to think about the unique things of Indian kitchen. Those things which are common in India but are unique from rest of the globe. 

Stainless Steel: Indian kitchens are full of stainless steel utensils. Here I am not referring only to the cookware but the utensils in which we serve and eat food. Where other countries have ceramic plates and glassware, we Indians use stainless steel plates and tumblers in our daily life.

Katori: Also referred as baati or vaati. It is a small bowl that is used to take a serving of any curry or liquid item. Like you can take a portion of dal or yogurt in katori to avoid it mixing with other food items in your plate. It is so required by the Indians that now ever fine dining restaurants have started providing these unlike the resent past. It is worth mentioning that in our daily lives, we use the katoris made of stainless steel 😀

Mixer Grinder and Pressure Cooker: You can refer these by their short names - Mixi and Cooker respectively. Any Indian kitchen is not complete without these 2 gadgets. I share an interesting experience with you. I took a service apartment on lease in Singapore. Before shifting there, I asked the agent that if he is OK to provide a couple of items if the apartment doesn't have those. My question was generic and I didn't have any specific item in my mind. The agent (he was from Singapore origin) quickly responded that he will not provide mixer-grinder due to its high costs. He definitely was well aware of Indian cooking .... LOL.

Milk: Well, milk itself is not unique to India or Indian kitchen but the way it is treated, makes it quite unique. We Indians believe less in skimmed or low fat milk and prefer to buy full cream milk. Then the processing of milk starts. First, we boil the milk. Then we remove the cream from it. After that we blend the cream in mixer and extract butter from it. Then add lemon juice to the leftover liquid to extract paneer .... is it too much to digest? It must be confusing for those who are not used to this process. A diagram will make it easier.

Don't be surprised that all the products mentioned in the diagram are consumed in most of the houses. To add little more spice to the story, the above list of the milk products is not complete. I didn't mention some products like khoya (maava) in the diagram simply because I am not aware of the process.

Another thing to note is that, Indians prefer to boil the milk even if it is already pasteurized😃

Cooking Gas: It is not a unique concept in itself unless you look into this from a different angle. In western countries, the electric burners are also common. So, you don't get surprised if the kitchen has cooking gas or electric burner. But in India, the presence of electric burner is rare and almost every kitchens has cooking gas - LPG or natural gas for cooking.  The induction or the hot plate is used as a backup option. The advantage of cooking gas is to get almost instant temperature control. When you increase or decrease the gas flow, you almost instantly see the difference in the temperature of the vessel and thus can control the cooking immediately. It is very helpful in some specific instances like boiling the milk. 

It is worth mentioning that India is progressing fast in laying the gas pipeline. Just like water and electricity, the gas comes directly from the distribution center to the kitchen. The consumption is measured using a gas meter and invoice is generated according to the consumption. How cool is that !!!

Wheat flour: Though the most common and popular staple food of the world is rice however, we Indians use rotis made of wheat flour as another staple food. If you have never seen a roti then it is quite similar to the tortillas. In other countries, the fine wheat flour (maida), white in color, is more common. But in India, every kitchen would have the whole wheat flour (atta) in the stock. It is generally brown in color. The difference in color is insignificant but it makes it really different is that atta is much more nutritious than maida. 

Fresh food: Though the time is changing but still, the fresh food is preferred in Indian kitchens than the frozen/packed food. Western world is more inclined to buying frozen/packed food like meat, cut vegetables and fruit. Indians still want to buy fresh vegetables/meat from market and cook them. You will not get anything more than 1 week old in the fridge of an Indian kitchen. I mentioned 1 week considering that the couple is too busy to buy vegetables more frequently. If any household can buy more frequently then you will get more and more fresh vegetables in their kitchen.

Vegetarian food: As per the statistics, 70% of the world's vegetarian population comes from India. Not that Indians do not eat meat but even a hardcore non-vegetarian will not eat meat for all his meals in the week. Eating vegetables, grains, pulses, dairy etc. is part of everyone's diet. It is for the same reason, you will never have dearth of vegetarian food in Indian kitchens. In fact, some non-veg dishes have been converted to vegetarian when they traveled to India. Examples - biryani, kabab, burger, hot-dog and yellow/green/red Thai curries. If you want to try veg food across India, I believe, you will never be able to taste all vegetarian dishes in your lifetime. You cannot get this variety of vegetarian food anywhere else in the world. India is not called the "Paradise for vegetarian food lovers" for no reason.

Magic Masala: India is known for its spices and flavors. However, there is a peculiar thing you would notice in Indian kitchens. Every kitchen will have a home made masala (spice/flavor) that is unique in itself. For all practical purpose you can consider it as Magic Masala. It would be a combination of multiple flavors. When you add it in the specific food (the food items for which it was made), the taste would improve magically.  If you take the recipe and try to replicate, you cannot exactly replicate it. Only moms and grand moms know how to make it. Example: My mother make a masala by mixing salt, black rock salt and few other spices. You add it in lemonade, lassi or yogurt and voila !! ....  ambrosia is ready.

Disclaimer: My observation is based on my travel and experience. It shouldn't be generalized.

मेरी व्यथा

मैं एक बैरागी की तरह हूँ। ना मेरा कोई घर है, ना कोई देश; ना कोई धर्म और ना ही मेरी कोई लालसा। किसी परिंदे की तरह पूरा संसार ही मेरा है। ना मेरा कोई अपना है, ना ही किसी से कोई बैर। मैं तो बस अपना पेट भरने के लिए आपसे इतना भोजन लेता हूँ, जैसे सागर से 1 बूँद पानी। मैं उस भिक्षुक की तरह हूँ जो जगह-जगह घूम कर भोजन मांगता है और अगर दुत्कार दिया जाए, तो भूखा ही रह जाता है। फर्क सिर्फ इतना है कि मैं दिखने में भिक्षुक जैसा नहीं हूँ। और अगर भोजन दिख जाये तो मैं 1 बूँद जितना भोजन बिना किसी की सहमति के ही ले लेता हूँ। जैसे अच्छाई-बुराई, चल-अचल, शाकाहारी-मांसाहारी सभी कुदरत की देन हैं, वैसे ही मुझे कुदरत ने ऐसा बनाया है।

मैं गाना अच्छा गा लेता हूँ। परन्तु मेरे शरीर का आकार इतना छोटा है कि मेरी आवाज़ आप तक पहुँच ही नहीं पाती। और जब मैं अपनी आवाज़ सुनाने आपके करीब आता हूँ तब आप मुझे दूर भगा देते हैं।

 

आपने कहानियों में सुना-पढ़ा होगा कि अगर कोई भूखा रोटी चुराता है, तो उसको चोर नहीं कहते। तो फिर मुझ से इतनी नफरत क्यों? इतनी कि मुझे देखते ही लोग मुझे जान से मार देना चाहते हैं - ज़हर दे कर, रौंद कर या पीट कर। आप ही बतायें कि अगर कोई आपके भण्डार से अनाज का 1 दाना ले ले, तो क्या उसका कत्ल कर देना न्याय है? क्या मेरा कुरूप होना इतना बड़ा अभिषाप है कि मुझे जीने का भी हक़ नहीं? किसी अदालत में मेरी कोई सुनवाई क्यों नहीं?

मैं सिर्फ 1 मच्छर ही तो हूँ, जनाब!!!

 

Super Woman

जुलाई के महीने में आज सुबह बादल घिर आए थे। मौसम सुहाना हो गया था। मैं भी सुबह 7 बजे सैर करने निकल गया। व्यस्त होने की वजह से, कभी कभी ही जा पाता हूँ। आज मौसम ने मुझे मजबूर कर ही दिया था। 

जैसे ही पार्क में दाखिल हुआ, सामने से Saxena साहब आते दिखाई दिए। अक्सर पार्क में वो सुबह सैर करते मिल जाते हैं। बहुत पाबंध हैं सैर के मामले में। मैंने उनको हाथ हिला कर इशारा किया। 

        - और Kulkarni साहब, कैसे हैं? बहुत दिनों बाद?

Saxena साहब ने गर्म-जोशी से हाथ मिलाया और हम साथ में सैर करने लगे। आज मुझे वह कुछ अलग लग रहे थे। चाल में वही फुर्ती, बातों में वही जोश, लेकिन फिर भी कुछ तो था जो मुझे खटक रहा था। सैर करते करते हम दोनों ने बहुत बातें की - cars, investments, बच्चों की पढ़ाई, politics वग़ैरह वग़ैरह। पर फिर भी मेरा ध्यान बार-बार उसी कमी पर जा रहा था जो दिखाई नहीं दे रही थी, परन्तु महसूस हो रही थी। 

कुछ देर सैर करने के बाद हम एक bench पर बैठ गए। उनका चेहरा सामने से देखने पर मुझे मेरा उत्तर मिल गया था। उनके चेहरे पर झुर्रियां आने लगी थी, आँखों में गिढ़ थी - शायद घर से निकलते समय मुँह नहीं धोया था। उनसे पसीने की दुर्गंध आ रही थी। अब मैं थोड़ा uncomfortable हो रहा था। पहले तो मैं संकोच करता रहा, पर फिर मुझसे रहा नहीं गया। मैंने अपने अंदाज़ में कहा -

- लगता है office में बहुत काम है। 

        - है तो ! पर आपको कैसे अंदाज़ा हुआ ?

- आपके चेहरे पर थकान नज़र आ रही है। और आज deodorant लगाना भी भूल गए। 

        - Oh sorry. बेटे के लिए breakfast और school का tiffin बना रहा था।  Late हो रहा था, तो जल्दी-जल्दी में रह गया। 

बहुत सहज भाव में Saxena साहब ने नाखूनों से आटा साफ़ करते हुए कहा। उनको कोई शर्मिंदगी नहीं थी। उनकी पत्नी का देहान्त होने के बाद वह ही घर संभाल रहे थे। उनकी दुनिया थी बस 1 बेटा, जो 10th class में पढ़ रहा था। 

- आपको पिछले महीने promotion भी मिली थी। आप इतना काम कैसे कर लेते हैं? घर, office, investments, बेटे की ज़िम्मेदारी, दुनियादारी और अपनी सेहत भी  - सब इतनी अच्छी तरह कैसे संभाल लेते हो ?  

        - क्यों ? सब working women भी तो इतना काम करती हैं !! आप मुझे working woman ही समझ लीजिये। 

मुझे तो जैसे झटका लग गया हो। यह बात कभी इस तरह सोची ही नहीं थी मैंने। 

- Saxena साहब, आप तो बहुत modest हो रहे हो। माना कि working women हम पुरुषों से ज्यादा काम करती हैं, पर, घर के बाकी सदस्य भी तो कुछ ना कुछ काम करते हैं। जैसे  मेरे घर में investments, banking,किराने का सामान लाना, घर  और car/scooter की repair etc. सब मैं ही देखता हूँ। आपको ना ladies वाली facilities और ना gents वाली, और काम सारा का सारा। आप normal working woman नहीं, आप तो SUPER WOMAN हो। 

हम दोनों ठहाका मार कर हंस दिए। पर अब मौसम बदल चुका था, बादल छंट चुके थे। अब मुझे उनकी झुर्रियां नहीं बल्कि उनकी determination, आँखों में गिढ़ नहीं, बल्कि चमक दिख रही थी। उनकी पसीने की दुर्गंध अब मेहनत की महक में बदल चुकी थी। मैंने माहौल को हल्का करने के लिए topic को थोड़ा बदला। 

- आपके हाथ की दाल-मखनी का तो जवाब नहीं। आपके promotion की दाल-मखनी आज भी याद है मुझे। 

        - अरे, ऐसा कुछ नहीं है। कोशिश करके जैसा-तैसा खाना बना लेता हूँ। But, thanks for the compliment. 

- अब दिल्ली वाली दाल-मखनी तो यहाँ मिलने से रही। पर आपकी दाल-मखनी उससे कम भी नहीं। 

        - अगर ऐसी बात है तो Sunday को आप सपरिवार घर आ जाइये। दाल-मखनी ही बनाएंगे। 
        - चलो Kulkarni साहब, अब चलता हूँ। तैयार हो कर office भी जाना है। 

Saxena साहब ने मुझसे हाथ मिला कर विदा ली। मैं तो अपने आप को ही व्यस्त मान रहा था, पर Saxena साहब को देख कर समझ में आया की 'व्यस्तता' किस चिड़िया का नाम है।  उनको देख कर यह पंक्तियाँ बार-बार याद आ रही थी - 

रोज़ चल पड़ता हूँ गमछा उठा कर,

मेरी जिम्मेदारियाँ मुझे थकने नहीं देती। 

 

मैं भी Saxena साहब से प्रेरित हो कर अपने घर की ओर चल पड़ा, एक नए mission की शुरुआत करने - घर के कामों में अपनी पत्नी का हाथ बटाने। उसे super woman से वापिस normal woman बनाने।  

  

गुड़-गुड़

चिड़िआ चूँ-चूँ  करती है,

मेंढ़क टर्र-टर्र करता है। 

दस्त से ग्रस्त पेट यह मेरा,

दिनभर गुड़-गुड़ करता है। 

                    सोते सोते आँखें सूज गई,

                    खिचड़ी खा-खा कर स्वाद मर गया। 

                    नींबू इतने महंगे हुए कि,

                    नींबू-पानी पीना वर्जित हो गया। 

बिजली तो मेहमान हो गयी, 

गर्मी से बुरा हाल हो गया,

Toilet के इतने चक्कर काटे,

कि पानी भी खत्म हो गया। 

                    छुट्टी जो ले ली मैंने,

                    बॉस भी नाराज़ हो गया। 

                    कम्पनी को इतना बड़ा घाटा,

                    मेरी ही वजह से जैसे हो गया। 

बर्फ का गोला ना खाता तो,

पेट गुड़-गुड़ ना करता। 

ना मैं लिखता, ना कोई पढ़ता,

सब का समय बच जाता।

My 1st poem written when I was suffering from diarrhea.

Two Plus

 
It was Sunday morning. I noticed 1 tire of my car had a puncture. As it was Sunday, the shops near my apartment were closed. I thought of giving it a try and rode my bike to check that. I found 1 bicycle repair shop open.

Me: 4 wheeler ka puncture lagate ho? (Do you fix puncture of 4 wheeler?)

Mechanic: Haan naa. (Of course.)

Me: Kitna lete ho? (How much do you charge?)

Mechanic: 2+ hai? (Is it two plus?)

I was confused. I could not understand his question. Was he asking about Two Plus? What was that? Is it a mathematical equation? Is it some new technology that I wasn't aware of? Or is he referring to 4 wheeler vehicle as 2+ (after all he is a bicycle mechanic)? Or did he mean something else and I misheard him?

Me: Kya? (What?)

Mechanic: 2+ hai kya? (Is it two plus?)

Now I was not just confused but completely baffled. There was no way that I could ask him to say that again. The engineer within me didn't want to acknowledge that there is something about my car that I was not aware of. More important, the engineer didn't want to look stupid in front of a bicycle mechanic. The safe option was just to say yes. He could anyways figure out after looking at the tire.

Me: Hmm ... haan (Hmm ... yes)

Mechanic: Haan, lagate hain naa. (Yes, we fix the puncture).

And he pointed his finger. I looked in that direction. There was something written in Hindi. I started reading that. 

"Yaha tubeless puncture lagaye jaate hain" (We fix tubeless punctures here).

Oh boy!!! The new technology the mechanic was talking about was not "Two Plus" but  "Tubeless". I nodded my head without any expressions on my face and turned towards my bike. I was trying hard to control my Tsunami like laughter. On the other side, the engineer within me took a sigh of relief.

Marathon

 We are super excited today. A marathon race was announced in our school that will be held exactly after 1 month. When I told my friends that we should participate, they immediately agreed. My mom told me once that we should  pursue our careers according to our strengths. I believe that I can become a good leader.   I already made 2 followers   and I believe that remaining few millions are just a matter of time. 

I asked them if we should practice for marathon every morning and go for  jogging. Vikas immediately agreed. Rohit refused because he wanted to conserve his energy for the marathon.  His idea sounds great. But I lost 1 follower out of   2. I and Vikas decided to go for jogging at 6 AM. And that the one who wakes up first will go to the other person's home to wake him up. It was a fool proof plan not to miss the practice.

I kept sleeping till 6.15 AM. Vikas also didn't come. As a good leader, I should lead my followers by setting good example. I got ready and went to his house at 6.30 AM. I can tell you from my experience that you can earn most brownie points from your friend's parents by  vising   him    while he is still asleep.  

 

My dad once told me that planning is most important thing. Big tasks take a lot of time in planning. We decided to make the plan for our workout. We were fast as our  plan was ready in just 1 week. 

 

We followed this plan for rest of the month. As a good leader, I was giving Vikas longer turn while I was sitting on the bench so that he could become stronger. Rohit also joined us occasionally. Probably he noticed how strong we were becoming and that he was going to loose from us. 

Soon both of realized that we needed shoes like Olympians have. Probably those  shoes could make us run few extra kilometers. That day I discovered that all the parents are same as the request of new shoes was declined by everyone's parents. 

All 3 of us reached school before time on the marathon day. It was Sunday. The clap sound was loud and clear.  The starting point turned into clouds of dust. We started with full excitement. I was able to cross the gate of  the playground and reached  the corner of the street. I was panting badly. My feet were hurting. I took some rest and looked back for Vikas and Rohit. They were in the similar situation. But no one noticed because there was no one behind us. Our parents should be held responsible as they didn't buy us those shoes.  

Rohit spotted Jain uncle's car. He lives in our neighborhood.  We communicated using the sign language and settled in his car quickly. We were still panting loudly. Jain uncle was kind enough to drop us near the end point. And we crossed the  finishing line easily.  

We covered 7 KM marathon in just 15 min. I don't know why this was not featured in  world records. As a good leader,  I will  take this matter to the organizers. 

गुनाहगार

सूरज भी अब अपने घर की तरफ रुख कर चला था। साँझ जितनी काली थी, उतनी ही डरावनी भी। चौपाल पर जमघट लगा था। दुलारी सुबक-सुबक कर रो रही थी। सुबह से ही उसका बुरा हाल था। एक तरफ कुआँ तो दूसरी तरफ खाई। ना तो वह मानसिंह के साथ रह सकती थी और ना ही उसके बिना। 2 बच्चों को ले कर अकेली करेगी क्या? कैसे जियेगी? कैसे पालेगी बच्चों को? इसका जवाब तो महिला आयोग वालों के पास नहीं था लेकिन वे लोग दुलारी का पक्ष ले कर मानसिंह को खूब सुना चुके थे। महिला आयोग की बिमला मैडम तो यूं अपनी धाक जमाए बैठी थी, मानो वो ही सरपंच हो। पिछले कुछ दिनों में दुलारी और पंचों पर पूरी तरह से दबाव बना रखा था। अब तो बस पंचायत के फैसले का इंतज़ार था।  

चौधरी साहब ने मानसिंह की ओर देखा। वह तो बस अपनी गर्दन झुकाए और मुठियां भींचे खड़ा था। गाँव के सबसे समझदार लोगों में गिनती होती है मानसिंह की। फिर अपनी पत्नी के साथ ऐसा व्यवहार? गाली-गलौच तक तो फिर भी यकीन कर सकते हैं पर मार-पीट!!! यह तो हद हो गई थी। उसके गुस्से की गवाह तो पड़ोसन छाया भी थी। छाया दुलारी के घर पर ही थी जब काम से आते ही मानसिंह ने दुलारी को उसके सामने ही फटकार लगायी थी। दुलारी कई दिन तक छाया से नज़र नहीं मिला पाई थी। देखो तो इस निर्लज को - माथे पर शिकन तक नहीं।

"अब सोच क्या रहे हो चौधरी साहब? अपना फैसला सुनाइये।" बिमला मैडम ने रौबदार आवाज़ में कहा। 

"तो यह तय रहा। दुलारी दोनों बच्चों के साथ इसी घर में रहेगी। मानसिंह हर महीने 5000/- खर्चे के लिए दुलारी को देगा। इस गाँव में आने की इजाज़त नहीं है। पैसे किसी के हाथ भिजवा देगा। और अगर उसने ऐसा नहीं किया तो पुलिस में शिकायत की जाएगी। "

"क्या कह रहे हैं चौधरी साहब? इतना पैसा तो उसकी कमर तोड़ देगा! कैसे देगा वह इतने पैसे हर महीने? और खुद कहाँ रहेगा? इतना तो बहुत ज्यादा है। कुछ तो रहम करो।" बब्बन तिलमिला कर बोला।  

"अरे शुक्र करो की पुलिस में नहीं दे दिया इसको। सारा जीवन चक्की पीसता रहता।" बिमला मैडम टूट पड़ी बब्बन पर। 

"पंचों ने फैसला सुना दिया है। रात हो चुकी है। मानसिंह को आज रस्सी से बाँध कर रखा जाए।  मौका मिलने पर बैल भागने की कोशिश करता है। बब्बन, तुम्हें ही इसकी पहरेदारी करनी होगी। कल सुबह इसको गाँव से निकाल दिया जायेगा।" चौधरी साहब ने कड़क आवाज़ में कहा। 

"हाँ हाँ ! पूरा गाँव देखेगा की इस्त्रियों से बद्तमीज़ी करने का क्या अंजाम होता है!" बिमला मैडम ने अपनी जीत का डंका बजा दिया था।

मानसिंह के हाथ रस्सी से बाँध दिए गए। बब्बन ने रस्सी पकड़ी और मानसिंह को ले कर चल पड़ा। मानसिंह चुप-चाप बब्बन के पीछे पीछे चल रहा था। 

 

"यार , तूने अपने बचाव में कुछ कहा क्यों नहीं? खुल कर बोला होता तो यह सब नहीं होता। तेरी समझदारी तो पुरे गाँव में मशहूर है। और सब जानते हैं, दुलारी की किसी से नहीं बनती। सजने-सवरने के सिवा और करती क्या है पूरा दिन? और तेरी पीठ पर जो चिमटे का निशान है, वह क्यों नहीं दिखाया तूने? तू कुछ बोलता क्यों नहीं? कुछ बोलेगा भी?"

"बब्बन, तू तो मेरा दोस्त है। सब जानता है। मुझे तो बस बच्चों की चिंता है। दुलारी को कहाँ फुरसत की वो बच्चों को देखे। सुंदर होने का घमंड ही उसका साथी है। मेरा क्या है? काम के साथ-साथ घर और  बच्चों को संभालने से  मुझे तो आदत सी हो गयी है। मेरे जितना काम यहाँ करता था, उतना ही शहर जा के कर लूंगा। पर पता नहीं बच्चे मेरे बिना कैसे रह सकेंगे? उनको पढ़ाएगा कौन, खाना कौन देगा? दुलारी अपने घमंड में उनकी ज़िंदगी ना खराब कर दे !" कोल्हू के बैल की तरह पिसने जा रहा था शहर, और वो भी बिना दुलारी से कोई उम्मीद किये।  

दोनों बस चले जा रहे थे। जल्दी से जल्दी घर जो पहुँचना था। चलते चलते नदी तक पहुँच गए। नदी के किनारे जा कर रुक गया मानसिंह। पैर दुखने लगे थे उसके। दोनों थोड़ी देर वहीं बैठ गए। मानसिंह नदी की ओर टक-टकी लगाए देख रहा था। इस बार तो पानी भी खूब उफान मार रहा था। पिछले साल की बाढ़ में कच्चा पुल भी टूट गया था। अगर कोई गिर जाए तो बस ... हो गया काम। 

"पता नहीं क्या सोच रहा है मानसिंह? हे भगवान कहीं .... नहीं नहीं  भगवान, ऐसा करने से रोक दो उसे !" 

बब्बन थोड़ा घबराया और फिर हाथ आगे बढ़ा कर उसने मानसिंह की रस्सी खोल दी। मानसिंह ने अपना कुर्ता उतार दिया, और फिर पैजामा। नदी पार करने के लिए कूद गया। बब्बन थोड़ी देर तक वहीं खड़ा नदी की ओर देखता रहा और मन में प्रार्थना करता रहा कि मानसिंह उस ओर पहुँच जाए।
